Recipe: Easy Homemade Granola Bars
Yield: 10 6-inch bars
Prep Time: 10 minutes • Cooling Time: 20 minutes
4 Tablespoons butter
2 cups plain granola
1 cup crispy rice cereal
1/4 cup mini chocolate chips
1/4 cup mini peanut butter chips
1/4 cup brown sugar
1/4 cup honey
In a medium, heavy-bottomed saucepan, melt butter over medium high heat. Add brown sugar and honey, and whisk to combine. Bring to a boil, and then simmer on low for two minutes.
Meanwhile, spray a 7x11 baking dish with cooking spray. Set aside. Remove the butter and sugar from heat. Stir granola and cereal into the mixture, and combine with a rubber spatula until completely coated. Pour into prepared pan, and press into a smooth, even layer. You can wet your hands or spray a rubber spatula with cooking spray to ease this process.
Allow to cool for about 15 minutes, and then sprinkle with peanut butter and chocolate chips. Press gently into the granola bars, and then allow to cool completely. Remove from pan, then using a large, shark knife, cut into bars.
