Recipe: Scrumptious Breakfast Sandwiches

These delicious sandwiches make a fantastic, protein-packed breakfast!

Makes: 1 sandwich              Prep Time: 15 minutes                   

Ingredients

  • Canola or olive oil cooking spray
  • 2 eggs
  • ¼ avocado, sliced
  • 2 slices tomato
  • ½ tsp pepper
  • 2 slices whole wheat bread (alternative: 1 whole wheat English muffin)

Directions

Heat cooking spray in a large skillet over medium heat. Add eggs – cook your favorite way (fried, scrambled, etc) until done (about 7 minutes).

Meanwhile, toast bread in toaster.

Place eggs, avocado slices, and tomato slices on bread. Serve warm!
